Combine yolks, salt and pepper in a small bowl, insert standard beaters and mix on Speed 1 until smooth, 30 seconds. While mixing on speed 1, add yolk mixture to sauce all at once and mix until well blended, 20 seconds. Place egg whites and cream of tartar in a large stainless or glass mixing bowl. [. . . ]
